I have several gallons of miscellaneous color latex paint that I would like to use as the primer coat. Is this OK or do I need to use a primer specific paint?

It depends on the project. It might work if you are not worried about the color and the finish is not glossy but if you are hoping for this project to have professional results then I would not risk it. Primer is deigned for a reason and luckily its usually cheap.
