We recently purchased an older home with a large bricked fireplace. The brick is in excellent condition, but it has been sealed. Is there a way to paint the brick without a ton of work in doing some sort of strip on the brick?

Yes you can paint the brick. Clean the brick (remove all dust, soot or grime) and prime it before painting. Use a general purpose fast drying oil base primer to make sure it will stick well. After that you can use any paint you want for a finish.
