I just built a trivet out of hard maple and wenge. I was going to use tung oil to rub on it. Will it withstand the heat of a pot/pan coming out of the oven or the stove? If not what would you suggest?

No… no application will withstand direct heat like that… use place mats on it before setting any hot object on it…
