We are planning on stuccoing our new house with black doors (including garage doors) and trim with dual black shingles and dark/charcoal stone front. I was leaning towards a gray and black scheme but I cant seem to find any examples where we live. Am I making the right decision or is there a better color to go with the black?

I think grey and black could turn out to be a bit too boring and not cozy or warm enough. I would probably pick green and black which will still make your house look quite stately, but not as harsh and cold as the grey and black combination.
You cannot go wrong with a gray and black color scheme. There are a lot of colors that would go with black trim but stick with gray, it will not need updating because it is a timeless color scheme, much like a little black dress. Those colors are not fad colors that would need to be changed for a long time, unlike aqua and pink combo which went out in 1986. On top of that if you decide you dislike the charcoal color black is a neutral and will go with an endless variety of other colors.
