I’ve heard that one of the reasons you need to repaint your interior is to help keep the drywall from drying out and crumbling. Is this true or just an old wives tale? If it’s true then should you repaint the ceiling at the same time as the walls to be consistent?

It's definitely NOT TRUE…
Primer and paint does protect drywall from some water damage and to chemicals, can only be cleaned if properly painted. But overall this is a wives tale.
