We restained our cabinets with a gel stain, we liked the darker look so we did not wipe any of the stain away, but now they are super sticky, what should we do now???

Allow the stain to fully dry. Some stains could take several days to dry. The time depends on the stain, cleanliness of the surface and the humidity.
At this point wiping the stain would ruin the look and cause you to strip. Don't touch anything and let it dry.
